This recipe is one I learned from my sister, but after making it a couple of years I have kind of tweaked it to make it my own. It’s a super easy recipe and one that my family always devours.I like this recipe because I usually have all of the ingredients on hand, and I always have shredded chicken in the freezer. (I make large batches of shredded chicken and freeze them into about 2 cup portions) If you’ve never made enchiladas before, this is a good one to try! It’s not to daunting and doesn’t require a ton of steps!
